【青红辣子鸡】

材料:
肉鸡腿4只、青椒3只、红尖椒3只、干辣椒10只(辣椒数量可根据嗜辣程度来增减)、大蒜10瓣、淀粉1大匙、酱油1大匙、料酒1匙、糖1大匙、盐少量、熟芝麻1大匙、香油1匙、油

做法:
1,将鸡腿剁成大小适中的块(选择锋利的剁肉刀),用淀粉和盐将鸡块抓匀

2,红绿尖椒洗净斜切成段,干辣椒用剪刀剪成段

3,蒜剁成蒜茸,用清水冲洗沥干待用(用水冲过大蒜的粘液不会黏锅,此法多用于大量炒制蒜末时,比如避风塘)

5,锅烧热,倒入适量油(能没过鸡块),待油烧至7成热,下鸡块,拨散,将鸡块炸至表面焦黄,捞起沥干油待用

6,锅中留底油,放入蒜末炒香
